This allows you the freedom to manage the fermentation rate and control when your starter peaks, ensuring it stays healthy and ready for baking without daily feedings or the need for multiple re-activations from refrigeration. Beyond sourdough, this versatile appliance can also be used to ferment kefir, kimchi, sauerkraut, or yogurt, and even store cosmetics or medicine at specific temperatures. Despite its compact size, it can accommodate a single 1-quart/1-liter jar or two smaller jars, and includes a removable and dishwasher safe shelf for flexible storage. It also boasts low power usage, with a maximum of 38W in cooling mode and 20W in heating mode.
